I heard him say a word close to creator, but I think David doesn't like Weyland so he might have said something else. Notice the engineer doesn't even attack until David actually says something to him.

What did he say to the engineer? He said the same thing as in the beginning when he was watching that guy on the screen talk to him in a foreign language.

my opinion is that it was david speaking the language that got the engineers attention, and then it realized somehow that he was synthetic and thats why it tore his head off. david is like the humans attempt at playing the engineers game and it didnt like that at all. i could be way off but that is what i think. and i dont believe he says the same thing that he was learning in the beginning of the film. that was just an example of him studying ancient languages - we can perhaps presume that the engineers language would be the predecessor to ancient earth languages and so, by "deconstructing" ancient earth languages, david was able to come up with an undestanding of the language that the engineers would speak. part of that is explained or at least suggested by the scene early on where david discusses charlies thesis as well as davids ability to understand the controls for activating the holograms and opening the doors in the temple.
