Here are my thoughts on this. Elizabeth is a survivor or has a strong survival instinct. Baked into human DNA is survival, fight or flight. However, having a talisman or religious symbol is something that humans feel gives them a bit of an edge in all situations. All human cultures have had these things. The cross is one symbol for god and it also mentally empowers the wearer that some additional force is with them to protect, defend and look out for. This is purely intangible scientifically but it does not matter because it does add some mental edge to the game of life or death. The Cross in this case symbolizes that External Power beyond that of the physical world we see and hear and touch which we all hope and pray watches out for us, aids us and sustains us. If the Engineers are Gods because they can manipulate DNA then so be it. If the Engineers created all human being then OK it does not matter. The Engineers are physical beings. They have symbols they use who knows if they believe in a non-physical God. For Shaw, she believes in an all powerful God and that is OK even if the Engineers are our creators. Because clearly the Engineers are not all powerful since they can get dead by runaway DNA experiments.
