Well, any book with Giger's work like Necronomicon, or the Species Art Book or Prometheus, they all are very good for your collection. Just to name a few others, I suggest Robert Venosa's Illuminatus (Giger was impressed with him) and The Wildlife of Star Wars: A Field Guide by Terryl Whitlatch and Bob Carrau (Lucas/Chronicle Book.) Although it doesn't fall into a Science Fiction book collection, Salvador Dali's 50 Secrets of Magic Craftmanship is a must have. ;) Hope that helps...

Also, if you are interested in the execution of Science Fiction Art, I HIGHLY suggest Mechanika with Doug Chiang, it's a "how to" primer and very impressive to say the least

Jim Burns (artist) made some really beautiful books. Two of my favourites were co-authored with Harry Harrison, Planet Story and Mechanismo. I think they're long out of print but probably obtainable on e-Bay.

The most terrifying fact about the universe is not that it is hostile but that it is indifferent

Rodney Matthews is worth taking a look at, though he is probably better known for doing album covers.
