There could be  a number of ways.
Yes he could be the one who is sacreficed to create the Xeno, just like in Gigers Alien Life Cycle and this would thus mean we get a scene that explains the creation of the Xeno.
He could be in a scene that tells the tale of the Orginal Derelict on LV426 in that he pilots the ship to get rid of the Xeno Eggs and Sacrefices himself by landing on LV426 knowing that he is not going to escape in his mission to quarantine the Organism.
Either way it does seem it will point to a scene that will have a connection with the events of the Derelict on LV426 and the Xeno Creation or what its purpose was.

i think the engineers have to sacrifice one of their own in order to make human beings. Its possible that is the bald guy near the waterfall.

I hope BigDave is right... The Quarantine theory sounds most satisfying. I don't like the thought of the engineers having to sacrifice themselves in order to do what they were born to do; bio-engineering, BABY! 
Seriously, though... then again, on the other hand, we haven't seen them in action, we don't know their midnset or personality. Sacrifice is present in the Xeno's lifecycle aswell. The host has to die in order for it to be born. Maybe they got that trait from their creators? 
Personally, i just want them to rely on their cutting-edge technology and machinery in order to create.
Basically: A. If Engineers are cold, heartless bastards, and/or if their personality is very out-of-the-ordinary and they are comfortable with doing so, then, sure... going to work involves dying, i guess it's allright. 
OR
B. Engineer tech/Machinery is the only way to do it. The sacrifice is a display of some shred of morality that one of the Engineers displays. I just hope the poor bastard doesn't get chest-burstered... bursted? Whatever, you know what i mean.

Well, pardon me for my poor grasp of the english language, but...
"Sacrifice Engineer" isn´t different from "Sacrificed Engineer"?
So why everybody is talking about the sacrifice of an Engineer, and not about an Engineer sacrificing somebody else?

I wonder if maybe each of the urns is not an offering to the stone temple pilot. (sorry couldn't resist)
Maybe the "sacrifice engineer" is responsible for containing each newly created organism in an urn, and placing it in the sacred space that surrounds the giant head shrine in the temple.
The Prometheus crew violating this space could certainly provide motive for the engineers' anger.

This reminds me of Giger's original temple lifecycle mural where one Jockey seems to be placing a facehugger onto another Jockey. Seemed at the time like a highly ritualized practice. Sort of suggested that the Alien was some sort of object of worship.
Now it occurs to me that maybe this is a similar practice to leaving an injured comrade behind with a grenade for the enemy to find. Say you are being overrun by enemies and you want to buy time for your buddies to escape. You purposely infect yourself with this nasty organism so that when the enemies break in they will have something bigger to deal with than just an injured Jockey.
So either it's a religious-type sacrifice or a kamikaze thing.
