I took this from my phone while I was watching AC Blu-ray making of the film. Sadly, there's just 2 second shot of the Engineer extras.
As you can see, their skin is more pinkish and their eyes have lighter sclera (probably because they had no eye lenses unlike the engineer actors from Prometheus who had) but are bald and have a much higher nasal bone like LV-223 Engineers. They also wore tunics, hoods and sandals.
From what I've heard (I just heard), these are the original Engineers and the LV-223 Engineers could possibly be genetically enhanced servants.

Yes, the long vein is black, maybe because its connected with the pressure suit (my assumption).
But if I'm not mistaken, some of these other veins look dark red or blue (I don't have the best eyesight).
The scene with the last Engineer was shot in dark room.
I think it has something to do with colour grading that was done in post.
The same thing with the eyes. In the film, they look very black, but they actually have lighter sclera, not 100% black.
